Choosing the Right Equipment - New Series!


Today marks part one of a new series of articles we will be writing about choosing the right equipment: how to find the ideal machine for your business.  In this introduction, we will review the variety of machines available and some general issues the consumer should bear in mind when buying equipment for restaurants, delis, caterers, and other food-service operations.

Selecting the proper equipment requires some thought and planning.  The space you have available is an important consideration as is proper location of the appliance where staff can easily access the unit to remain productive.  A location too close to cooking, grilling, or frying equipment will mean grease and dirt, less efficiency and more frequent cleaning. When customers are able to see your equipment, appearance is more important.  Also, equipment too small or limiting may cost you more in the long run.   When dealing with scales, a moist or humid environment may require specially waterproof scales so they are not ruined.

Planning the Perfect Super Bowl Party: Professional Home Kitchens

Since we first opened our store in 1947, we have been dedicated to selling quality commercial kitchen and restaurant equipment.  From 40 quart mixers to 13" slicers, we primarily stock multiple large machines ideal for industrial kitchens.  But there actually is some overlap between what professional chefs use and what can be used in a high level home kitchen.  We are proud to have a section on our site, clearly titled "For the Home Kitchen," where we showcase commercial machines that fit inside smaller kitchens.

Some, such as the panini grill, provide a service not generally available for home chefs but easily accessible in for many kitchens - an opportunity to make neat, exciting, restaurant-quality food in your own home.  Others, such as our commercial 6 qt mixers and 10 qt mixers or 9" and 10" meat slicing machines (2 models available: Fleetwood and Omcan), are stronger, more durable, and more reliable than the models generally sold for home use.

Whether you are catering for friends or even beginning a business from your house and looking to start small, these smaller but still heavy-duty machines are the way to go!

While we get ready for the Superbowl watching tonight's Jets-Steelers game, we thought we'd share our favorite Super Bowl party dinner:

Deconstructed Serious Steak Sandwich:
Easily make a platter of sliced meats with a compact 9" or 10" slicing machine.  Grill some onions and mushrooms.  Provide sides such as sliced cheese, tomatoes, and mustard.  Allow guests to pick their breads and sandwich innards, and expertly grill multiple sandwiches with panini or flat sandwich presser. (To save time and cleaning, you can grill the onions and mushrooms on the sandwich press beforehand!)
